The national dish. Despite it familiarity, Pad Thai emerged only as recently as the mid 20th century. Facing a rice shortage, Prime Minister Plaek Phibunsongkhram wanted to develop a national dish using local, natural, ingredients and promote a strong national identity at the same time. The result was Pad Thai.
But here's the thing. With bases of tamarind sauce
and palm sugar, no tow Pad Thais will taste the same.
